Today is Friday...yipeeeeyayyyy!!! moi like!! :) Ok, being a Friday & all and after the bouts of laughter from the dudans @ yesterday's post, today shall be a happy & 'clean' one..hahah..
The ever favourite pumpkin apam..apam labu la...this one no need to force feed moi coz I just love the taste :)
Pumpkin apam eaten with steamed grated white coconut with a pinch of salt. Sooo sedap!!
I was on leave on Wednesday & someone told me 'the chief' was busy putting letters in tonnes of envelopes..ohhh adakah...adakah...that thing is coming soon...or next change or cukup bulan ka..yahooooo! I shall wait & I shall be a pekerja contoh by ...by counting the days in February..muahhahaha...
Have a great weekend ahead..I am going to choose the recipes to start by baking tonight!
Ingredients A
2 tspn instant yeast
1 tspn castor sugar
3 Tbspn warm water
Ingredients B
230 gm pumpkin (boiled with skin and then scoop the flesh & weigh)
150 gm sugar
1 egg
150 ml thick coconut milk
Ingredients C (sifted together)
200 gm multi purpose flour (I switched to cake flour - works fine)
1 1/2 tspn baking powder
Method
Mix well Ingredients A. Set aside for about 5 -10 minutes.
Blend Ingredients B till smooth & fine. Pour into a large bowl.
Mix Ingredients C into B and blend bit by bit until fine. Mix well.
Pour Ingredients A into the mixture & mix well. Set aside batter for about 1 hour.(I covered the bowl)
Heat steamer on high fire. Pour batter into smaller cups for about 15- 18 minutes. Grease the cups with some oil before pouring the batter. I used medium fire as I do not want the apam to 'blossomed'.
Serve with steamed grated coconut mixed with a pinch of salt.
